I hope everyone is having an amazing week and excited for fourth of 
July weekend!  I don't know about you, but I can't wait to spend some time at the beach and have fun with family and friends.  So today I bring to you a recipe that is perfect for those summer BBQ's you're sure to be attending.  I have been making this black bean salsa recipe for years and it's always a crowd pleaser.  It's quick and simple to make, vegan, and actually pretty healthy so we can chow down without feeling guilty in our bikini. (Definite plus.)  Every time I have made this for a party people ask me for the recipe and are shocked to hear how easy it is to make.  I can't rave about this scrumptious concoction enough so keep reading to find out the simple recipe!

  • 1 8oz. can whole kernel corn
  • 1 8oz. can black beans
  • ½ red onion diced
  • 1 seeded and diced tomato
  • 2 cloves garlic minced
  • 1 Jalapeno finely diced
  • 2 tbsp. chopped fresh parsley
  • Zest & juice of 1 lime
  • 1 Ripe avocado cut into small chunks
  • Salt & pepper to taste
  • ½ tsp. cumin
  • 2 tbsp. Olive Oil
Combine all ingredients and let sit in fridge for 1 hr to allow flavors to marinate. 
Will stay well in fridge for three days, but best served day of with tortilla chips. 

Had to take a break from all that chopping to give Oliver his obligatory belly rub.
