Guys, this salad is so good.  Like seriously, it will knock your socks off.  In my opinion, nothing elevates a basic salad more than a kick ass homemade salad dressing.  And in this recipe the Poppyseed Dressing is definitely the star of the show.  A little savory, a little sweet and perfect for a spring salad with some fruit mixed in.  I love making this salad this time of year because it reminds me of summers spent at my parents lake house in Upstate NY.  My mother is a phenomenal cook, and this is one of her signature dishes she would make all the time when we would have BBQ’s with family and friends.  It’s such a crowd pleaser and I have yet to meet anyone who doesn’t love this simple, fresh and healthy salad.  It would be a great dish to bring to a dinner party and even though it looks fancy it’s so easy to make.  Keep reading to find out how!

Poppyseed Dressing:
  • 1/3 cup Apple Cider Vinegar
  • 1/2 cup Onion, finely chopped
  • 1 tsp Dry Mustard
  • 1 tsp Salt
  • 1/3 cup Sugar
  • 1/2 cup Canola or Vegetable Oil
  • 2 tsp Poppyseeds

Directions: First, chop up onion finely and place in your glass cruet.  It is key to make sure your onion is finely chopped otherwise it won't be able to pass through the small opening in the cap when you go to pour your dressing.  After adding the onion add all other ingredients into the cruet, pop on your lid, and shake like you mean it to blend all ingredients together.  (Note: Double check your lid is on tight.  Many a time I have gone to shake my cruet and sprayed my kitchen and myself with the oil/vinegar mixture.  Not pleasant.)  Dressing will keep in the fridge for about two weeks.

Candied Slivered Almonds:
  • 1/2 cup Raw Slivered Almonds
  • 3 tbsp. sugar
Directions: Combine sugar and slivered almonds in small pan and sauté over medium heat for 5-6 minutes, stirring often.  Watch these suckers closely, when the sugar starts to caramelize and they turn a nice golden brown then you know they're done. Once they reach that golden hue turn off the heat and let the almonds cool on a piece of wax paper.

  • Spring Greens Mix
  • Sliced Strawberries
Directions:  Once your dressing is made and almonds cooled it’s time to assemble your salad!  Place your spring greens in a bowl, add your strawberries and almonds and drizzle liberally with your delicious homemade poppyseed dressing.  Now I kept the toppings super simple for this variation, but feel free to add anything else you like…tomatoes, cucumbers, dried fruit, mandarin oranges, and sunflower seeds would all be welcome additions.  As well, crumbled blue cheese pairs amazingly with this salad if you eat dairy.
